Sgt. Indrakumar Rai’s Gurkha Chutney
Sergeant Indrakumar Rai’s Recipe for Special Gurkha Chutney
Serves 10
400g Tomatoes
2 cloves garlic
100g Sugar
50g raisins
125ml vinegar
10g fresh chilli or chilli powder
5g ginger powder
Salt, to taste
Method
1. Skin the tomatoes and cut into quarters.
2. Finely chop the garlic.
3. Cook the tomatoes, ginger, garlic, chilli and salt until the tomatoes are pulpy.
4. Add sugar, vinegar and raisins and cook until the mixture thickens.
5. Allow to cool, then serve or bottle and use as required.
